Chicken Salad
4 chicken leg quarters, boiled or roasted, meat removed and cut into chunks
1 can pineapple tidbits, drained
1 cup frozen peas, parboiled and chilled
1/2 to 1 cup chopped walnuts
mayonaise
Mix all of the above ingredients in a bowl (enough mayonaise to make
it moist). Grind in some black pepper and add salt to taste.
This is surprisingly addictive.
CHINESE CHICKEN SALAD
4 chicken breasts
teriyaki sauce
1 head shredded lettuce
3-4 sliced green onions
1 pkg. slivered almonds
1/2 pkg. maifun (rice sticks)(found in Chinese food aisle):optional
3 small cans mandarin oranges
Dressing:
1/2 tsp. dry mustard
2 Tbsp. sugar
2 tsp. soy sauce
1 Tbsp. sesame oil (or vegetable oil)
1/4 c. salad oil
3 Tbsp. vinegar
Marinate chicken in teriyaki sauce (up to 1 day) and bake.Deep fry
maifun in oil. Just before serving, toss all ingredients together and
add dressing (just combine and briskly shake or stir ingreds.).
Serves 8-10
